Cucumber Relish

“Hello Kurma, I have a whole lot of cucumbers. Anything nice to do with them?”

My reply:

“Try this fabulous cucumber relish!”

Spicy Thai Peanut & Cucumber Relish

cup white vinegar or lemon juice
4 tablespoons palm sugar, finely shredded
1 teaspoon salt
cup water
4 tablespoons vegetarian oyster sauce
1 red chili, chopped fine
medium cucumber, peeled, or unpeeled if thin-skinned, and thinly sliced
1 tablespoon finely chopped fresh coriander
3 tablespoons chopped roasted peanuts

cucumber relish:

Whisk together the vinegar or lemon juice with the sugar, salt and water until the sugar dissolves. Add the vegetarian oyster sauce and the chopped chili.

Serve: layer the cucumber slices in a small bowl, sprinkle with coriander leaves, pour over the sweet-sour sauce, and top with the peanuts.
