Cooking Class at Sorrento

Trevor prepares to cut the pastry:

Held a delightful hands-on cookery class with Charmaine and her husband (pictured, above, centre) and her friends at Sorrento, a pleasant beachside Perth suburb.

My facilitator for the day was the lovely Leesa (pictured, below), who fell upon my website while wandering through the wonderful world of google.

The unseasonal windy, cool weather outside did nothing to affect us as we were snugly absorbed in the kitchen.

Our mainly South African crew enjoyed the afternoon. We prepared Malaysian Curry Puffs, Roasted Cauliflower & Stir-fried Snow Peas with Cashews, Flaky Spinach Filo Triangles (Spanakopita), Deep South Cheddar & Jalapeno Chili Biscuits, Sage-flavoured Pumpkin Ravioli with Brown Butter, Fresh Curd Cheese Steaks @ Salad Greens on Crusty Bread, and Crispy Wonton Stacks with Fresh Berries & King Island Cream.

Here’s a line of filo pastry with tasty spinach and feta filling, poised for folding.

The pastry is folded over itself to form the traditional triangles which are then baked until flaky and crisp.

After a groaningly full repast I wended my way home into the darkness of night, comfortably numb after a full weekend of kitchen bliss.
