Sometimes simple is best. Here’s the ingredients for yesterday’s solo 30-minute one-pot meal.

effulgent dinner:

Red cabbage, fresh fennel, Thai rice, cumin seeds, fennel seeds, a little olive oil, salt, a spritz of asafetida and a good splashing of fresh lemon juice.

up close and personal with red cabbage:

As you can see, red cabbage often turns blueish when cooked. To retain the red colour it is necessary to add something sour. I added my lemon juice after the cooking. And that parsley really completes the pretty picture.
